Processed and Unprocessed Meat Did Not Tell the Same Story

Dietary guidance often groups red and processed meat together. PURE tested whether their outcome patterns were actually the same. Higher unprocessed red-meat and poultry intake were not significantly associated with mortality or major cardiovascular disease, while higher processed-meat intake was associated with both. The study shows why processing, preservation and food context matter and why broad food labels can obscure materially different associations.
